Mama's Waffles

My children love when mommy makes waffles. My husband does, too! This recipe is adapted from the Fluffy Pancakes recipe

We usually serve with freshly whipped cream. It is 100 times better than Cool Whip or anything from the squirty can!


1 1/2 cups of all-purpose flour (I use unbleached)
1 tablespoon of baking powder
1/2 t of salt, can be course or table salt
2 tablespoons of sugar
2 pinches of cinnamon
1 1/4 cups of milk
egg yolk
4 tablespoons of melted unsalted butter
egg white
pinch of cream tartar

Directions:

Turn on waffle maker and spray with cooking spray if not non-stick.

In a large bowl, sift or stir all dry ingredients together. Make a well in the center then set aside.

In a medium bowl, combine all wet ingredients except for egg whites.

In separate bowl, beat egg whites until thicken, add cream of tartar, then beat until stiff peaks form.


Add wet ingredients (except for egg whites) to dry ingredients then gently fold in egg whites. Doing this will result in light yummy waffles.

Add about 1/4 cup or per manufacturers directions for waffle maker. Cook to desired doneness. If not serving immediately,, put in a warm oven about 200F or 90C on a ovenproof plate.

These waffles freeze very well. Put them in a freezer safe container and just pop in the oven or microwave frozen. Great for busy people on the go!

Also you can add whatever flavorings you want. We like chocolate chip and blueberry. Just add with the flour.


Just in case you do not know!

Whipped Cream
1 half pint of whipped cream
2 tablespoons of confectioner's sugar
1/2 teaspoon of vanilla

In a cool bowl, beat cream with a hand mixer or whisk (will be swell if the beaters/whisk are cold, too)

Once cream is thickened, add rest of the ingredients and whip cream until soft peaks or stiff peaks form.
