Chopped Nicoise Salad- Make a SALAD lighter?

How do you make a salad lighter? I have a sneaking suspicion that most folks think salad almost always equal healthy. Oh, boy that's the total opposite of correct I am afraid. Just check out this article from "Eat This, Not That"'s author Davif Zinczenko "The Unhealthiest in America 2010". The number 1 salad coming in at an artery clogging 920 calories, 65g of fat (20 saturated, and 0.5g trans) and a whopping 1,685mg of sodium! Yikes! So please think long and hard when going out for salads. Most establishments has Nutritional Facts with their foods, so take like an extra 30 seconds to check those out when choosing your salad.

So our anniversary was this Tuesday and I must say, although that Faux Chicken Doner tasted absolutely incredible, it wasn't the lightest of dinners! So for the rest of the week, I vowed to make salads. A salad that's both healthy and very filling. Last night's choice was from my pretend best friend, Ellie Krieger. Her chopped Nicoise Salad has amazing color, big flavor, filling, and it has 267 calories and 10 grams of fat. Perfect light dinner after a not so healthy dinner the night before.
Chopped Nicoise Salad

I chose Nicoise Salad because I had Nicoise Salade while in Paris this past Spring. It tasted absolutely amazing with all the yummy bold flavors. I was in heaven with something so simple. The chopped version, does not have the anchovy fillets, fava beans, peppers and eggs that's pretty much a staple in with Nicoise Salade (Nicoise meaning made in Nice, France). But it's every bit as yummy!!!

Ingredients
·         4 small red potatoes (about 1/2 pound)
·         1/3 pound fresh green beans, trimmed
·         12-ounce can light tuna packed in water, drained
·         1/2 cup chopped pitted Greek or Spanish olives
·         1/4 cup diced red onion
·         2 large tomatoes, seeded and diced (about 2 cups)
·         5 cups chopped romaine lettuce
·         2 tablespoons olive oil
·         1/2 cup freshly squeezed lemon juice
·         1 teaspoon Dijon mustard
·         1 teaspoon of anchovy paste
·         Salt and pepper
Directions
Boil water in a large pot, put the potatoes in, cover and cook for 15 minutes or until fork tender. Add the green beans and cook for 6 minutes more. Put the cooked potatoes and beans in a dish and set in the refrigerator to cool, or plunge into a bowl of ice water to cool quickly.

Put tuna, olives, onion, tomato and lettuce in a large bowl. Dice the potatoes and green beans, add them to the bowl and toss.

In a small bowl whisk together the oil, lemon juice, mustard, salt and pepper. Pour the dressing over the salad, toss well and serve.

Hope you all enjoy this as much as my family did! With the grey summer day, a colorful salad is what we needed :)

Oatmeal Scotchies: Baking After Dark- Captured!

Last night I tried out a new cookie recipe called Oatmeal Scotchies. My husband bought some butterscotch chips at the commissary, and I did not know what to do with them. Of course cookies, frosting, brownies, cheesecake and cake popped in my head- haha! So with half the bag, I tried cookies, an easy fix. Recipe is from Nestle Tollhouse Cookies Recipes.

Baking at night and during the nap time is the best time for a mother of 3 children under 4 to do.....anything and this recipe is relatively easy. The recipe needs some tweaking, but the family approves! Here's the recipe as is, though I halved it as no family needs 48 cookies in their home! Following are some photos from a bored mommy baker/wannabe photographer:

Oatmeal Scotchies

Ingredients
·         1 1/4 cups all-purpose flour
·         1 teaspoon baking soda
·         1/2 teaspoon salt
·         1/2 teaspoon ground cinnamon
·         1 cup (2 sticks) butter or margarine, softened
·         3/4 cup granulated sugar
·         3/4 cup packed brown sugar
·         2 large eggs
·         1 teaspoon vanilla extract or grated peel of 1 orange
·         3 cups quick or old-fashioned oats
·         1 2/3 cups  Butterscotch Flavored Morsels

Directions

PREHEAT oven to 375° F.

COMBINE flour, baking soda, salt and cinnamon in small bowl. Beat butter, granulated sugar, brown sugar, eggs and vanilla extract in large mixer bowl. Gradually beat in flour mixture. Stir in oats and morsels. Drop by rounded tablespoon onto ungreased baking sheets.
BAKE for 7 to 8 minutes for chewy cookies or 9 to 10 minutes for crisp cookies. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

Faux Chicken Doner Kebab- It's our Anniversary!

Faux Chicken Doner Kebab
Today is my 3rd year marriage anniversary. It's like a normal day to us, really. My husband went to work, and I stayed home with the kids and even babysat for a friend.

It's no biggie to me as we worked the day we married as well. I went to work, on my lunch, got married and went back to work, ha.

I was 8 months pregnant with my daughter and I was exhausted. Not only because I was big and pregnant, but because I spent a good 2 months fighting hard for us to get married. Since we were getting married under German law, we needed paperwork up the ying yang and it didn't help that my husband was married twice before! We also had to get every single document translated and the translator we hired took her sweet ass time doing so. To make matters more annoying, the translator talked our ears off whenever we'd see her. I know more about her than I do my own mother! Not to mention it all cost me over 1500 dollars!!!

We also were on a very crucial time-limit. I was separating from the military and in order for me to stay here in Germany we had to get married, which we planned on anyway. So that day, I was just happy for it all to be over. No photos were taken, unfortunately, and we ate a doner kebab at the stand or what the Germans call Imbiss. It was a delicious doner, our favorite stand in fact!

Quick history of doner kebabs from WikiDoner kebab (Turkishdöner kebap or döner kebabı, literally "rotating roast", often abbreviated as döner, also spelled donair, donar, doner, or sometimes donner), is a Middle Eastern dish made of lamb meat (mainly) cooked on a vertical spit and sliced off to order. Two similar dishes are called shawarma in Arabic and gyros in Greek,[2] although ingredients and sauces differ. The English term kebab in some countries refers specifically to doner kebab.
There are many variants in the composition of the meat, the ways of serving it, and the garnishes.

A while back I watched a show on the Good Food Channel on UKTV and there was a chef, Simon Rimmer competing against a Doner Kebab takeout/takeaway shop to see who makes the best food quicker, tastier and cheaper. The dish he created looked AMAZING. Light refreshing and just damn good. The doner shop doner looked like your standard messy doner, but won in the end as the customer wanted a spicier taste. When I saw that I HAD to try it. So I did tonight.

This tasted delicious and was quick to whip up. Everything is fresh and homemade...well except the ketchup used, but even Gordon Ramsay keeps ketchup in his pantry, so I am not ashamed! This recipe  can be easily changed. Use whole wheat flour for the flatbread (our went bad in the pantry oops), use pork or traditional lamb fillets. Add loads of veggies, make it meat free, JUST TRY THIS!

Chicken 'doner' kebab (adapted from Simon Rimmer's)

For the chilli sauce
  • 1/3 cup white wine vinegar
  • 1 cup sugar
  • 3 jalapenos, chopped or to taste
  • 1/3 cup tomato ketchup
  • 1 tsp Worcestershire Sauce
For the chicken
  • Boneless skinless chicken breast, about 3
  • salt and freshly ground black pepper
  • 1 tbsp olive oil
  • about 1/2 cup chicken stock
  • 2 tablespoons butter
  • ½ lemon, juice only
For the flatbread
  • 2 1/4 cups bread flour, plus extra for dusting
  • 2 tbsp extra virgin olive oil
  • about 1/3 cup hot water

For the onion rings
  • vegetable, enough to one-third fill a deep, heavy-based pan
  • 1 cup all-purpose
  • ½ tsp freshly ground black pepper
  • ½ tsp salt
  • about 1/2 cup cold water
  • 1 medium onion, sliced into 1cm/½ in-thick rings
For the dressing
  • 1- 1/2 cup Greek-style yogurt
  • 1 tbsp chopped fresh mint, plus extra to garnish
  • ½ lime, juice only
Preparation method
1.    For the chilli sauce, place the vinegar and sugar into a non-aluminium pan. Bring to the boil over a medium heat. Add the chillies and cook for five minutes to reduce the liquid by half. Add the ketchup and Worcestershire sauce, stir and simmer for five minutes.

2.    For the chicken, slice each chicken breast into 5-6 long strips and season with salt and freshly ground black pepper.

3.    Heat the olive oil in a frying pan and fry the chicken breasts over a medium heat for 3-5 minutes, turning occasionally, until lightly browned.

4.    Pour the stock over the chicken. Bring to the boil, then reduce the heat and simmer for 3-5 minutes. Add the butter and lemon juice and stir. Simmer for 5-7 minutes, until the chicken is cooked through. (No pink should remain when the meat is cut into. If any pink remains, cook further.) Keep warm.
5.    For the flatbread, place the flour into a bowl. Add the olive oil, cracked black pepper, salt and hot water and bring together to form a dough. Turn the dough out onto a lightly floured work surface and knead until it is smooth and elastic.

6.     Divide the dough in half. Using a rolling pin lightly dusted with flour, roll half the dough out to form a circle7-8in in diameter. Repeat with the remaining dough to create a second circle.

7.     Heat half of the vegetable oil in a frying pan and place a dough circle into the pan. Cook for 1-2 minutes on each side, or until golden-brown all over. Remove and keep warm. Heat the remaining oil and cook the second dough circle as before.
8.     For the onion rings, heat the oil in a deep, heavy-based pan until a breadcrumb sizzles and turns brown when dropped into it. (CAUTION: hot oil can be dangerous. Do not leave unattended.)
9.     Place the flour into a clean bowl and season with salt and freshly ground black pepper. Add the water and whisk to form a smooth batter.
10.  Dip the onion rings into the batter to coat completely. Carefully place into the hot oil in batches. Cook for 3-4 minutes, or until crisp and golden. Carefully remove with a slotted spoon and drain onto kitchen paper.

11. To serve, divide the chicken pieces between the flatbreads. Drizzle with the chilli sauce and place a dollop of the yogurt dressing on top. Top with a few onion rings and garnish with extra chopped fresh mint.

Hope you love this as much as my husband and I did!

Roasted Salmon with Grapefruit-Shallot Sauce and Spinach-Orange Salad with a Citrus Vinaigrette in Parmesan Cups

A light Sunday dinner is what I had  in mind. Usually Sunday dinners/lunches are huge and leave you feeling like, "damn, tomorrow's Monday!" I love putting on a huge show for Sundays, but decided that Saturdays are best for the elaborate meals. Something light, yet filling and delicious is perfect for Sundays to get you ready for those manic Mondays! Plus, my husband and I also decided, we should eat fish on Sundays, as well as throughout the week, but Sunday IS fish day. So this Sunday I went with my pretend best friend, you know who it is. Ellie Krieger! The side salad is from Giada De Laurentiis! Giada has some great light meals, too!

Roasted Salmon with Grapefruit-Shallot Sauce

INGREDIENTS

  • 4 skinless salmon fillets, 5 to 6 ounces each
  • 1/4 teaspoon salt, plus more for seasoning
  • 2 ruby red grapefruits
  • 2 teaspoons olive oil
  • 1 tablespoon minced shallot
  • 1 teaspoon freshly grated ginger
  • 2 1/2 teaspoons honey
  • Pinch cayenne pepper
  • 2 teaspoons lemon juice
  • 2 tablespoons thinly sliced basil leaves

Directions

Preheat the oven to 350 degrees F.
Season the salmon with 1/4 teaspoon salt, place in a baking dish and roast until cooked through, about 18 minutes.
While the salmon is cooking prepare the sauce. Cut 1 of the grapefruits into sections by cutting off the top and bottom of the fruit, then standing it on 1 end, cut down the skin to remove the pith and peel. Then, with a paring knife, remove each segment of fruit from its casing and cut the segments in half. Set the segment pieces aside. Juice the other grapefruit and set the juice aside.
In a medium skillet, heat the oil over a medium heat. Add the shallot and saute until softened, about 2 minutes. Add the ginger, grapefruit juice, honey, and cayenne pepper and bring to simmer. Cook until sauce is reduced by about half about, 10 minutes. Add lemon juice and season with salt, to taste. Right before serving, toss the grapefruit pieces and basil into the sauce. Put the salmon onto a serving dish. Spoon sauce over the salmon and serve.

Spinach- Orange Salad in Parmesan Frico Cups

For the Citrus Vinaigrette:
1/4 cup extra-virgin olive oil

1 tablespoon orange juice
1/2 teaspoon lemon zest
1/2 teaspoon orange zest
1 teaspoon honey
1/2 teaspoon kosher salt
1/2 teaspoon Freshly ground black pepper

For the Spinach Salad:
6 ounces baby spinach leaves (about 6 cups)
1 orange, cut into segments
1/3 cup sliced almonds, toasted
1/2 red onion, thinly sliced

For the Parmesan Frico Cups:
Place a silpat mat on a baking sheet. Place 6 (1/4-cup) mounds of Parmesan cheese on the mat and gently tap down until each mound is flat and 4 1/2 to 5 inches in diameter. Bake for 8 to 10 minutes, until golden and bubbly. Working quickly, use a thin spatula to transfer the Parmesan Frico to a muffin tin. Gently place a small drinking glass on top of the Parmesan Frico to mold it into the shape 1 of the muffin cups. Let cool until firm, about 5 minutes. Continue with the remaining Parmesan cheese.

For the Citrus Vinaigrette:
Combine all the ingredients in a jar or a tight-sealing plastic container. Shake to blend.
For the Spinach Salad:
In a large bowl, combine all the ingredients. Drizzle with vinaigrette and toss to combine. Divide the salad among the Parmesan Frico Cups and serve immediately.
