While annoyed with my USA soccer team my impatient ass decided to make dinner during the game rather than after. An angry Sommer in the kitchen will not produce yummy food. So instead of waiting I cooked after halftime because couldn't take it anymore.
I planned this meal while out with my kids, with of course, my lil ones in mind. My son doesn't like red sauces and a friend out of the blue recently asked me if I was any good at making fettuccine alfredo. So I just had to make this- again! This is my very own recipe so I didn't measure anything- just winged it. You can use beef or shrimp instead of chicken and any veggie instead of broccoli.
Note: They won!!!!
Chicken-Broccoli Penne Alfredo
Serves 4
Ingredients
2 tablespoons of Extra Virgin Olive Oil
3 boneless skinless chicken breasts
5 tablespoons of unsalted butter
2 medium shallots- minced
3 cloves of garlic - minced
1/3 cup of dry white wine
1-1/4 cup heavy cream
1/2 cup of Parmesan cheese
4 cups of dry penne pasta
1-1/2 cups of frozen or fresh broccoli florets
Course salt and freshly ground pepper
Directions
1) Season Chicken breasts with salt and pepper. Heat a large skillet to medium-high then add olive oil. Once oil is hot, add chicken. Cook 12-15 minutes turning once. Once cooked, leave to rest for 5 minutes, then slice.
2) Bring a large pot of salted water to a boil. Add penne stirring occasionally. Cook to box directions. During the last 5 minutes, add broccoli. Now drain through a colander.
3) Meanwhile, heat another large skillet to medium heat; add butter. Once butter is melted, add shallots. Cook about 4 minutes then add garlic. Cook another minute then add wine. Cook until wine reduces by half, about 4 or 5 minutes- eye it. Now lower burner to low heat. Add cream stirring occasionally until thickened about 3 to 4 minutes. Take skillet of the hob, then add cheese. Stir until melted. Add chicken, broccoli and pasta to skillet. Stir until combined then season with salt and LOTS of pepper! Be prepared for some yumminess!!
Note: If you don't have a bunch of large skillets, just roast the some chicken breasts for about 30 minutes on 350 degrees. Allow to rest and follow recipe. I prefer bone-in skin-on breast for ultimate juiciness and flavor after roasting. Just de-skin and de-bone chicken. Put the bones and skin in a ziplock bag and save for stock. Or just eat the yummy crispy chicken skin (that's just me). But if you're after quick, stick with skinless-boneless.

Fotografie Friday
I took this photo yesterday, but I doubt I'll be able to take any cool shots today due my kids being ill. I doubt most appreciate close-ups of vomit or even better explosive diarrhea. :) I am currently reading Scott Kelby's "The Digital Photography Book Vol.1" and I learned that my shots must be a lot sharper and the only way to accomplish that is a tripod. Apparently my tripod isn't that great, but hey it gets the job done. Plus to save shake, I used my camera's timer. It's amazing how sharp this shot is to me.
Also I used some flowers I bought at the local PennyMarkt for 2 Euros :)

A Review Things I did Instead of Blogging for 7 days
Saturday afternoon I was tired of looking at my baby's mullet/don king gone wrong hair so I cut it whilst he was in the bath. He didn't notice what I was doing and he looks great!! I'm quite proud after messing up my oldest son's hair twice. I used scissors instead of clippers as they have very fine soft hair. Later in the week I snipped some of my son's hair, too! And even my husband approves.

We went to many playgrounds and parks this week in our town and around Heidelberg. On Tuesday, the kids saw their friend playing at the fountain in our town's Marktplatz so I let them join to. They had a great time even though they played in the fountain WITH their clothes on. Kids usually play in swimsuits or even naked, but this was an unexpected stop. They wanted to strip like they usually do at the waterpark at the Neckarwiese, but my American ass wasn't playing that this time. No other children were naked so my weren't either. Well except the baby who did half. I bought them Bob the Builder ice cream afterwards, and they took a much needed bath afterwards!

On Wednesday we went to a playground in Heidelberg we've never gone to before. There was another girl there who was 7. She didn't speak much english, but playing is an universal language and the kids had a blast. Especially since the girl was wild and crazy like them.

Besides playing, I did watch the America play Algeria. Most Americans don't give a damn about soccer, but living overseas and not being able to watch the NFL and NBA at normal times has been a bit difficult and annoying and soccer/football/fussball/futbol has filled that void. And damn, what an exciting sport it is! More Americans need to jump on the bandwagon!! I was thisclose to having an heart attack while watching it because we were making stupid mistakes. Algeria threatened a goal many times. I was so pissed off I went and cooked dinner at half time to settle my nerves. I was listening to it in the background. So instead ripping out more hairs out of my head, I cooked Chicken-Broccoli Penne Alfredo. Thankfully in the last few minutes of the game, the US finally scored and we are #1 in our group!!! Saturday we play Ghana!
Finally, I got my books in the mail from Amazon! I asked on Twitter and also some close friends for book ideas. It is very hard to read when you have 3 children under 4, but I plan on trying because damn my braincells are dying by the second!!! Right now I am reading The Digital Photography Book Vol. 1 by Scott Kelby. I have all three volumes and I am halfway through the first volume. I am hoping to learn a lot from it as I am in love with photography now. So much to learn and even more money to spend! Also arrived was "The War of Don Emmanuels Nether Parts" and "Confederacy of the Dunces." I am so excited to read both!So I finally have time to blog today. My youngest two are ill so while one is napping and other is snacking on low salt crackers, I am blogging and reading blogs. If there are anyone half interested in my mutterings, thank you for your patience! I am putting blog something in my schedule from now on.

Confessions, Nipples, and Other Random Nothingness
1) So while chatting with a friend today, I realized something. I am a backwards late bloomer. I didn't fill out my clothes "in all the right places" until I was about 19.5 years old, I had my first kiss when I was 20 and I had sex for the first time when I was 19. There will be a post in a future explaining that one. And I just now know what I love to do all the time. Which is cooking and taking photos. I am ridiculously new to the world of photography and I have been cooking consistently for past 3 years. I know you're thinking, 'what's backwards about that?' Well, I found these passions when I became a mother, and it seems that I have no time or have to restrict when and how I should take these passions to the next level. Maybe I just have horrible time-management skills. It's something I will work on most certainly. Having picky eaters only allows me find creative ways to incorporate new tasty ways to put healthy, exotic food in front of them and I've learned to take my camera everywhere. So we'll see. I'll update soon.
2) Last year 5 months after giving birth to my 3d child, my crazy ass decided to take some boudoir photos for my dear husband. Why? Because my breasts were awesome! Really they were. Plus I don't really get to do wild spontaneous things as a mother, and I am a spontaneous kind of lady! So, I took some photos for my husband and was surprised with all the praise the photos I posted in Facebook and 2 other forums. Well, it's that time again. And there are some changed from last year. 1. I've lost all the baby weight; 2. I found a good hairstylist; 3. I found the perfect woman to do my eyebrows; 4. I learned from mistakes last year; 5. I am actually motivated to give 2 shits; 6. I will drink a glass or 2 of champagne prior! Last year I was meh about it all, way too nervous to research anything; yeah I know when you're nervous you usually try- I don't. Instead chomped on McDonald's hamburgers excessively. Well I am hoping the photos turn out nice and I will be working with the same photographer. Of course I will share here! Here's one from last year. Just a hint of nipplage, though.
3)Rain and cloudy weather has the strangest effect on me. Whereas it makes other people sleepy, I feel very motivated and inspired. Sunny weather makes me lazy and want to play all day which may be the typical thing with most people anyway. Today was cloudy, but humid, and I found I got loads around the house. More than I did total all week! I am thankful for a break from the sun, I guess :)

Shrimp, Tomato, Basil Pasta
One of my fave meals alla Martha Stewart's Kitchens. From the book, "Everyday Food: Great Food Fast" The second cookbook I bought in early days of cooking 3 years ago. This book is full of fab, quick recipes for the busy folk out there.
The Shrimp, Tomato, Basil was the first recipe I cooked from this book, and remains a family fave. Great use of seasonal ingredients and it's quick, aromatic and delicious!
Ingredients
Serves 4
1 1/2 pounds medium shrimp, peeled and deveined (tails removed)
Coarse salt and ground pepper
6 teaspoons olive oil
2 garlic cloves, minced
1 can (14 1/2 ounces) diced tomatoes in juice
1 pint cherry or grape tomatoes, halved
1/2 pound linguine
1 1/2 cups lightly packed fresh basil leaves, torn into small pieces, plus extra leaves for garnish (optional)
Directions
Season shrimp with salt and pepper. In a large skillet, heat 4 teaspoons oil over high. Add shrimp; cook until opaque throughout, turning occasionally, 3 minutes. Transfer to a bowl; set aside.
Make sauce: To the same skillet, add remaining 2 teaspoons oil and garlic; cook over medium heat until fragrant, about 30 seconds. Add canned tomatoes and their juice, along with 2 cups water; bring to a boil. Reduce heat; simmer, stirring occasionally, until tomatoes have softened and are saucy, about 15 minutes. Remove sauce from heat; stir in cherry tomatoes.
Meanwhile, in a large pot of boiling salted water, cook pasta until al dente, according to package instructions. Drain; return pasta to pot. Add tomato sauce, shrimp, and basil; season with salt and pepper, and toss. Serve immediately, garnished with basil leaves, if desired

My First Date in THREE YEARS!
My good friend offered to babysit my three children on Saturday. I was so happy because my children love her and she has a HUGE backyard where they can play like the crazy babies they are! Before we left, our youngest, who is 1, gave both my husband and I a hug. He KNEW we were leaving him, it was so sweet. I was thisclose to bringing him, but my husband I really needed this time alone.
Bad part is that I didn't properly plan anything, because my excitement for things such as this usually mean an automatic jinx. I only got excited after we dropped the kids off with her. Then I realized....what the hell are we going to do? We don't go anywhere around town without the kids. We usually go separately while the other watches the kids. I am spontaneous, so we eventually worked it out. All that mattered was that we were together. Cheesy Alert!
We walked down the Hauptstrasse holding hands. We NEVER hold hands while we're out because we're always holding a child, pushing a stroller, running after someone. It was also nice to "catch-up", eat alone, eat ice cream without sharing haha, people watch and just be together. It's been three years since we were able to go out alone and although it was only a couple hours, we cherished every second!

It was a great time and we promised to do it again at least once a month. The hardest part of living overseas is not having family around. I know if I were stateside, my parents or other family would happily watch our children. I was just not comfortable leaving my kids with anyone. When I was a single mother I knew a lot of people who babysat and I had my own personal sitter who would watch my son anytime I asked. But since having my daughter, I've never been comfortable, and after my baby was born, I gave up on the prospect of having a sitter until we moved/visited home. First of all I have three little people, and I worried that anyone else would not be able to handle them. Just reading and watching videos about abusive sitters and nannies prolonged my search. Luckily my friend is a mother of 4 and my children adore her and children. She's like a sister to me and I am so happy to know her. We also have another nanny for late nights. I am so happy. And once a month quality with the hubby will do so much for our marriage.

A Sprinkle of Randomness and a Dash Confessions
Saturday Morning.
Been up literally all night and I am not tired at all.
This morning I realized I haven't read any literature that hasn't anything to do with all things culinary since my first son was about 10 months old. Time to make a change. If anyone has any suggestions please suggest away!
I love to hear people talk about how great their children are. It makes me less self-conscious about bragging about my little ones! No one likes the parent who romanticizes everything single thing their child does. But there isn't anything wrong with a little boasting every now and again.
It's been hard to regain some sense of normalcy sense my son came home from the hospital. I had everything scheduled to a T, then all hell breaks loose. Times like this I wish I was back home and can have the help of my loving family. Not to mention the younger two are sick as well. What's this thing called normal again?
I love to squeeze my children. They're oh so squeezable and adorable. Especially when I'm feeling a bit stress. The harder I squeeze the harder they laugh!!! So happy they're so squishy!
The blogosphere is no joke. I have some serious research to do.

My Son's First Lesson on the Workings of Women
My daughter always was mean to my son, while he'd always do anything for her. My son was 2 and my daughter is 8 months in this picture. My son is now 4 and my daughter is 2.
So my daughter "Mawa" has been playing keep away since the age 9months. It makes her laugh more than anything else in the world knowing that she's "tricked" you into thinking she's going to give you something you want. I have been "tricked" and tricked by her many times.
Her favorite favorite victim however is her older brother J. He's a sensitive soul and is really stingy with his toys. So when she takes something from him, she gets a BIG reaction from him. Recently she's been playing keep away with her brother's Ben 10 watch and his Spongebob Squarepants helium balloon.
My husband and I constantly tell him that she messes with him because he will scream whine and make a huge deal out of it every single time. But he never listens and my daughter taunts him for a good 30 minutes. She literally laughs until she is gasping for air. I know it's bad that my husband and I laugh it is truly hilarious.
Today, she tried again with his Spongebob balloon. I finally sat J down and said, "J listen. Ignore she wants you to get angry. Just sit calmly and pretend you don't want it. And when she asks, say NOPE." And today he finally heeded mommy's advice.
And boy was she pissed.
She tried and tried to get her brother's attention and he just ignored her and said no to her. So instead of waving her white flag. She punched him instead. Lucky her J does not hit girls!

Mama's Waffles
My children love when mommy makes waffles. My husband does, too! This recipe is adapted from the Fluffy Pancakes recipe
We usually serve with freshly whipped cream. It is 100 times better than Cool Whip or anything from the squirty can!
1 1/2 cups of all-purpose flour (I use unbleached)
1 tablespoon of baking powder
1/2 t of salt, can be course or table salt
2 tablespoons of sugar
2 pinches of cinnamon
1 1/4 cups of milk
egg yolk
4 tablespoons of melted unsalted butter
egg white
pinch of cream tartar
Directions:
Turn on waffle maker and spray with cooking spray if not non-stick.
In a large bowl, sift or stir all dry ingredients together. Make a well in the center then set aside.
In a medium bowl, combine all wet ingredients except for egg whites.
In separate bowl, beat egg whites until thicken, add cream of tartar, then beat until stiff peaks form.
Add wet ingredients (except for egg whites) to dry ingredients then gently fold in egg whites. Doing this will result in light yummy waffles.
Add about 1/4 cup or per manufacturers directions for waffle maker. Cook to desired doneness. If not serving immediately,, put in a warm oven about 200F or 90C on a ovenproof plate.
These waffles freeze very well. Put them in a freezer safe container and just pop in the oven or microwave frozen. Great for busy people on the go!
Also you can add whatever flavorings you want. We like chocolate chip and blueberry. Just add with the flour.
Just in case you do not know!

1/2 teaspoon of vanilla
In a cool bowl, beat cream with a hand mixer or whisk (will be swell if the beaters/whisk are cold, too)
Once cream is thickened, add rest of the ingredients and whip cream until soft peaks or stiff peaks form.

Grilled Ribeyes and Asparagus
So it's Tasty Thursday! I've been a bit lazy lately, so what's the easiest option for a lazy humid day? Grillin'! It's easy and oh so tasty.
Today I just seasoned up some Rib Eye Steaks and Asparagus my husband brought home from the Commissary.
Make your own spice blend if you want. I never measure!
Sommer's Lazy Humid Day Steaks
Cumin
Chili pepper
Dried oregano
Freshly grinded sea salt and pepper
2- 8oz Ribeyes
1/2 lbs of asparagus
Olive oil
Freshly grinded salt and pepper
The trick is to allow the steaks to come to room temperature. So season the steaks with the spice blend and allow to sit out until it's room temperature. Oil the grates of the grill. The last 10-20 minutes or so, turn the grill on high.
No need to oil the steaks as the grill is already oiled up. Sear the steaks on both sides then turn the grill to medium-low then put on cover and cook to your preferred doneness.
While the steaks are cooking, cover the asparagus in about 3T of olive oil and season with salt and pepper. Turn the heat up to medium then slap the asparagus on after the grill and cook for the last 4 to 5 minutes.
Allow steaks to rest for about 10 minutes so the juices redistribute and you have yourself a lovely moist, butta steak.
I know many of you know how to grill already, but this is just in case :)

Mother and Son Time
I have 3 children. Three children very close in age.
They're constantly in competition for my attention. I feel guilty all the time because of it. Thoughts like, "if I had waited x amount of years" etc.
So to remedy this, I proposed an idea. Mommy-kiddie vacations! Me and the "child of the moment" take little trips together during the week, and then spend the whole weekend together. As my eldest son was just released from the hospital last week, he was naturally first. I got to know so much about the little guy that I did not want it to end! I found that he can read, play computer games, and do all sorts of puzzles. He's amazing and I often feel guilty that a lot of my attention is on his younger siblings.
Monday we went to Frankfurt Am Main; Tuesday we went to a indoor park; and that weekend we went to Munich. Was great fun!

Ghosts in my house?
"I know I just put those keys there!"
We as parents have all said that about keys or any kind of object many times. I know I have!
The other day I was preparing breakfast. I left my spoon on the table to get the milk from the fridge. I come back into the dining area, and the spoon was gone. I know I have momnesia, but it's not that bad I hoped. And then I suspected, erm, trickster ghosts for a moment and then I just called myself crazy and went to get another spoon. A week later I find a lake of spoons under the couch. Who did this?
Late at night, I hear people walking around my house. Me being the fraidy cat I am sit in the bed and say a silent prayer to myself hoping that I am actually crazy and hearing things. What was it?
You know who it was! The children. They're sneaky little cuties. My eldest is not so covert, my daughter usually hides in another room to eat cookies or play with something she isn't supposed. My youngest, who is 1, is the sneakiest. We call him Ninja Baby. His swiftness is down right frightening. I can be looking at him, playing Patty Cake with him, but somehow he successfully steals something from right under my nose. It is quite impressive and I hope to somehow teach him to use his powers for good in the future!
And at least I'm not going crazy.............yet

Tasty Thursdays continued..the Martha Stewart edition

Ice cream is the staple summer dessert.
Funnily enough I'd rather make this cold treat on the ugliest cold day of the season.
Today the sun is playing peek-a-boo, so it goes from sunny to cold, not your typical June weather, but hey, I live in Germany. Vaterland of unpredictable weather!
I was supposed to make this yesterday, but I had plans later that evening and got way too distracted. So today seemed the best day as I have no plans, and my eldest son is with Oma (German for grandmother).
My family LOVES this recipe and my son specifically asked for this. From Martha Stewart's Lessons and Recipes for the Home Cook!
Makes 1 1/2 quarts
1 vanilla beans, split lengthwise and scraped
1 1/2 cups skim milk, chilled
1 1/2 cups heavy cream
1/4 teaspoon table salt
6 large egg yolks
3/4 cup sugar
3 tablespoons corn syrup
Directions
In a medium saucepan over medium heat, combine the vanilla bean and scrapings with the milk and heavy cream. Bring to a gentle boil. Remove from heat, and let steep, covered, 30 minutes.
Prepare an ice bath; set aside. Whisk egg yolks and sugar on medium-high speed until thick and pale.
Place milk mixture over medium-high heat; bring just to a simmer. Slowly pour about 1/4 cup hot-milk mixture into egg-yolk mixture, beating on low speed until blended. Continue adding milk, about 1/2 cup at a time, beating until incorporated after each addition.
Return mixture to saucepan; stir with a wooden spoon over low heat until mixture is thick enough to coat back of spoon, 3 to 5 minutes. Custard should retain a line drawn across the back of the spoon with your fingertip.
Remove pan from heat; pour custard through a fine sieve into a medium bowl set in ice bath; add corn syrup. Let stand, stirring occasionally, until chilled. Freeze in an ice-cream maker according to manufacturer’s instructions.
Deep Dish Brownies with an Orange Twist
These brownies are most certainly a family treat! They disappear even faster than it takes to prep. And as you can see, it's quite difficult to take a photo of without little chubby baby hands in the way!
This is the go to dish on a lazy baking day! Easy doubled, tripled. or even quadrupled- if you roll like that :)
Prep Time:10 minutes
Cook Time: 40-45 minutes
Original Recipe Yield 12 bars
Inspired from Food Network's How to Boil Water
Ingredients
4oz unsweetened chocolate
1/2 cup of unsalted butter
1 cup light brown sugar
1/2 cup white sugar
1/2 teaspoons of table salt
2 large cold eggs
2 large egg yolks
1 1/4 teaspoons vanilla extract
a dash of orange extract (optional)
1 cup all purpose flour
Directions
Preheat your oven to 325 F. Place oven rack on lowest shelf. Place aluminum foil in an 8 inch square pan. Butter foil.
Melt butter and chocolate in the microwave for 2 minutes in a microwavable safe bowl. Stir, then continue to microwave or an additional 1 to 2 minutes. Careful not to overcook chocolate or else it will become grainy. You could also melt chocolate in a heatproof bowl over a saucepan with a inch of simmering water. Stir occasionally until chocolate is melted.
Now, stir brown sugar, 1/4 cup of white sugar, and salt into chocolate mixture until well incorporated. Next, stir in eggs one at a time. Stir each egg well before adding the next. Stir in vanilla extract and a dash of orange extract.
Now carefully stir in flour and remaining 1/4 cup of white sugar. Be sure not to overmix or else brownies will become hard and not super ooey gooey moist.
Bake 40 to 45 minutes. Brownies are ready when toothpick comes out clean when inserted in the center of the brownies.
Allow to cool on wire rack.
Enjoy the taste and smell!!!
